Tomato Basil Pappardelle

Handmade Artisanal pasta made in Rochester NY.

Tomato Basil Pappardelle wth Grilled Eggplant & Herb Relish

Ingredients for Herb Relish:

   2 cups fresh parsley leaves

   1/2 cup fresh mint

   3 green onions, chopped

   1-1/2 Tbs fresh oregano leaves

   2 Tbs capers

   3 Tbs pine nuts

   1 Tbs red wine vinegar

   2 Tbs Olive oil

Ingredients for the Eggplant:

  2 eggplants, sliced

  1 Tbs Olive oil


  Cook 12 oz. pasta for 6-8 minutes. While pasta is cooking, pulse relish ingredients with 5 Tbs of water. Add salt and pepper to taste.  

  Brush sliced eggplant with olive oil and grill in large skillet (or outdoor grill) over medium high heat. Grill 3-4 minutes per side.

  Place warm pasta in large serving dish and top with eggplant and relish
